Sweet Potato Toast

Are you looking for some new breakfast ideas or perhaps trying to eat less bread? Look no further, you have just found the answer in this Sweet Potato Toast recipe! Combine these sweet soft orange slices with some fresh fruit and our crunchy granola for an irresistible healthy breakfast or snack!

Ingredients

  • 1 Bigger or a few small sweet potatoes
  • Granola Creations – Dark Chocolate & Banana
  • Coconut oil
  • Yogurt
  • Peanut butter
  • Fresh fruit (blueberries, bananas, raspberries…)

Instructions

  1. Wash the potatoes and cut them lengthwise into 1 cm thick slices.
  2. Line your baking tray with parchment paper and arrange the potatoes so that they don’t touch.
  3. Smear the potato slices with a bit of coconut oil and bake at 180°C until tender.
  4. Top the potatoes with yogurt or peanut butter, our Dark Chocolate & Banana granola and your favorite fruit.
